1 Avocado, halved and pitted
2 eggs
4Tbs parmesan
Salt/pepper to taste
Directions
Preheat oven to 425
Split Avocado in half and pit
Crack an egg into each half
Cover with parmesan (recipe calculated with 2Tbs per half)
Salt and pepper to taste
Bake for 20 minutes -- ensure your egg is cooked.
Serving Size: 1/2 avocado with 1 egg

I thought this was very tasty. I will more than likely make it again. Although, I had to leave it in the oven for about 40 minutes for the egg to cook all the way. Next time, I’ll probably put the egg and avocado in the oven for about 20 minutes then take it out and sprinkle the Parmesan over it a - 1/6/20
