Introduction

Ingredients

    1/2 onion, or 1 c., chopped
    Bell pepper, 1/4 c., chopped
    1 tsp or less salt
    1 oz, about 24, almonds, chopped in half
    1 oz cubed cheese
    1 c. uncooked quinoa

Directions

Cook quiona in boiling water for 15 minutes, or until done. IN an iron skillet, fry onions, bell pepper, salt, oregano, lime seasoning, basil and other desired flavorings. Add a little olive oil if nessecary. Toss veggies and quinoa, and top with almonds and cheese. If serving it cold, don't add the cheese until it cools off a little bit.
