Ingredients

2 cups leftover Couscous
1 tbs butter
2 cups thinly sliced onions
2 cloves of garlic minced
1 tbs olive oil
1 tsp dijon mustard
3 eggs
3/4 cup milk
14 cup mozzarella cheese
1/2 cup parmesain
4 slices of tomato
salt and pepper
1/3 cup of cilantro
Directions
Mix 1 tbs butter with leftover couscous
Dump the couscous into an 8" pie plate. Press it down and up the sides of the dish.
Saute the onion, garlic and spinach in the olive oil
Spoon onions, garlic and spinach into the couscous crust
Mix together milk, eggs, dijon, 14 of the parmesan, and salt and pepper. Poor over the pie.
Top with tomato slices, then remaining parmesan, mozzarella and cilantro. Bake at 350 for about 45 minutes, or untl set and the edges have started to brown.
Cut pie in quarters and serve.
