Ingredients

    1 lb cabbage, shredded
    1 large red onion
    2 Tbl olive oil
    1/2 cup apple juice
    1 firm ripe pear
    1/4 cup walnuts
    1 Tbl red wine vinegar

Directions

Slice Cabbage. Slice red onion. In large heavy skillet heat 1 Tbl olive oil until hot but not smoking and saute onions, stirring until softened and golden. Add cabbage, tossing to coat with oil; salt to taste and stir in apple juice. cover and cook cabbage over mod heat until just tender, about 10 min. While cabbage is cooking, cut pear inbto 1/2 inch pieces and coarsely chop walnuts. In a small skillet, cook walnuts in remaining olive oil over mod high heat, stirring, until fragrant and golden. With a slotted spoon transfer nuts into a bowl. Saute pear in remaining oil in skillet, stirring until just tender. Add to nuts. Remove lid from cabbage and stir in vinegar. Cook cabbage over mod high heat stirring occasionally until most of the liquid is evaporated, about 5 min. Add walnuts and pear, tossing to combine.
