Ingredients

    Wash vegetables and meat. Peel potatoes and onion, cut into medium chunks and add to crock pot. Add carrots, then meat. Use desired amount of salt, pepper, and spices. (I use McCormick's All-Purpose Herb Blend). Drain mushrooms and distribute over meat. Drizzle olive oil over top and add 1/2 water if desired.

Directions

Turn crock pot on high after adding ingredients. Cover and cook for 1 hour and reduce to low setting. Cook for remaining minimum of 9 hours. Note: This stew may cook for up to 20 hours on low.
