Introduction

Easy, yummy casserole that takes care of a lot of your leftover veggies and that ground beef that you're not too sure what to do with! Easy, yummy casserole that takes care of a lot of your leftover veggies and that ground beef that you're not too sure what to do with!
Number of Servings: 6

Ingredients

    2 lg onions, sliced
    2 med potatoes, sliced
    1lb extra lean ground beef (cooked)
    0.5 cup long grain brown rice (cooked)
    1 cup chopped celery
    1 can tomato soup
    1 can boiling water
    salt and pepper

Tips

You can always substitute ground chicken or turkey to cut the fat!


Directions

Layer sliced onion on bottom of casserole dish. Sprinkle with salt and pepper. Layer sliced potatoes, salt and pepper. Continue layering with ground beef, rice, and celery, adding a little salt and pepper between eac layer. Mix soup and water separately and pour over the top of casserole. Cover and bake at 350 for about 2 hours.
