Introduction

I have been making banana bread for several years. This is a modified version of my original, for less fat. Of course, the higher fat version is much tastier & the texture is much more appealing. However, for a lowfat treat, this is very tasty! I have been making banana bread for several years. This is a modified version of my original, for less fat. Of course, the higher fat version is much tastier & the texture is much more appealing. However, for a lowfat treat, this is very tasty!

Ingredients

    3/4 c. unsweetened applesauce
    1 c. sugar
    2 eggs
    1 tsp. vanilla extract
    1 1/2 c. flour
    1 tsp. baking soda
    1/2 c. nonfat greek yogurt
    3 bananas, mashed
    1/2 tsp. cinnamon (optional)
    1/4 tsp. cloves (optional)

Directions

Preheat oven at 350 degrees. Grease (or spray) a loaf pan. In a large bowl, stir together the applesauce & sugar. Add egg and vanilla extract. In a separate bowl, sift flour, baking soda, cinnamon & cloves. Stir into wet ingredients. Finally, fold in yogurt & mashed bananas.
Bake for 60 minutes, or until toothpick inserted comes out clean.

Serving Size: Makes 12 slices
