Introduction

Ingredients

3 whole wheat tortillas
1 cup marinara
1 can black beans
.5 cup shredded sharp cheddar
.75 cup salsa
1 cup mixed bellpepper strips
.5 cup frozen corn
Directions
Preheat oven to 425 degrees.
In a medium bowl, mash the black beans with .5 cup of the salsa.
Spread half of the marinara on the bottom of an 9" by 9" casserole dish. Place one of the whole wheat tortillas on top. Layer half of the bean/salsa mixture on top of the tortilla followed by another tortilla. Spread the remaining bean mixture on top with half of the pepper strips. Place the final tortilla on top followed by the remaining marinara sauce, remaining pepper strips and corn. Sprinkle the cheddar on top.
Bake for 20-25 minutes or until cheese bubbles.
