Introduction

This is a normal egg salad with the addition of ginger, sprouts and spicy mustard This is a normal egg salad with the addition of ginger, sprouts and spicy mustard
Number of Servings: 4

Ingredients

    1/2 a large cucumber
    4 hard boiled eggs
    2 stalks of celery
    2 large carrots
    pickle relish, 2T
    3 garlic cloves
    ginger root, a piece about an inch big
    1 cup alfalfa sprouts
    mayonnaise, 2T
    pepper

Tips

I served this rolled up like a burrito in a whole wheat tortilla with whole lettuce leaves


Directions

Put the carrots, celery, ginger root, garlic cloves, alfalfa sprouts and cucumber in a food procesor and pulse until everything is chopped, add eggs and pulse again until they are chopped. This can of course be done by hand. Put everything together like a normal egg salad. Mix mayonnaise, pepper and pickle relish in a mixing bowl then add ingredients from food processor.

Serving Size: about 1/2 a cup
