Ingredients

    1 cup Brown Basmati Rice
    6 cups milk
    1 tsp salt
    2 tbsp butter
    1 tsp lemon zest
    3 tbsp brown sugar
    1/2 tsp ground cinnamon
    3/4 cup raisins
    1 tbsp vanilla

Tips

Rinse and soak rice for 30 minutes prior to cooking. Depending on the temperature, this may take longer than 60 minutes to cook.

I make this Sunday evening and pack into individual dishes for breakfast on the go.


Directions

Cook rice, milk and salt over very low heat or in double boiler until done (approx 1 hour). Stir in remaining ingredients.
Milk may not be completely absorbed; will thicken upon cooling.

    Very Good
    The recipe was unclear to me. I cooked it in a double boiler over low heat. I didn't know if it needed to be covered, so I didn't. After 2 1/2 hours, when the rice still wasn't cooked, I covered it. (What can I say? I never cooked brown basmati rice) That said, when done, the pudding was delicious. - 1/11/14
