Ingredients

3 medium eggs or 2 large, separated
300g f/f soft (cream) cheese
100g f/f fromage frais (fromage blanc)
grated zest half a lemon
2 tablespoons cornflour (cornstarch)
Quarter cup of splenda
200g f/f cottage cheese
Directions
Separate the eggs.
In a large bowl mix together the egg yolks, soft (cream) cheese, fromage frais, lemon zest, splenda and cottage cheese. Beat until smooth.
In another bowl whip the egg whites until stiff then beat in the cornflour.
Then gently fold the egg white mixture in to the other mixture using a metal spoon and a figure of 8 action until thoroughly combined.
Pour in to a ceramic dish and bake in a preheated oven at 160c / 320f / gas mark 3 until golden brown and risen. Would also be nice cooked in individual ramekin dishes.
Chill before serving.
