Ingredients

    * ground turkey, 16 oz
    * olive oil, 1 tbsp
    * Carrots, cooked, 1 cup slices
    * Celery, cooked, 1 cup, diced
    * Onions, raw, 1 cup, chopped
    * Garlic, 3 cloves
    * Mrs. Dash (R) Garlic & Herb Seasoning Blend, .5 tsp
    * vegetable broth, homemade, no added salt, 3 cup
    * Pepper, black, 1 tsp
    * Water, tap, 6 cup (8 fl oz)
    * split peas, dried, 1pound

Tips

We always save the peelings from preparing our vegetables in a zip-loc bag in the freezer, even herb stems; when the bag is full, we brown the scraps in a little olive oil, add enough water to cover by at least 2 inches, bring to a boil, reduce heat and simmer 20 minutes; strain and store in 1 cup quantities.

Directions

Following package directions - cook split peas in 6 cups of water until just tender;DO NOT ADD SALT OR ANY FAT. Brown turkey, carrots, celery, onions, garlic in oil; add Mrs. Dash, black pepper, vegetable broth ... simmer until carrots are tender; stir into split peas. The soup can be in a slow cooker (you still have to brown the meat and vegetables).
