Introduction

Ingredients

    - 1 lb ground dark meat turkey
    - 1 tbsp peanut oil
    - 1 cup chopped mushrooms
    - 1 can (8 ounces) water chestnuts, drained and diced
    - 1/4 tsp ground ginger (or 1 tbsp fresh minced)
    - 2 tbsp rice vinegar
    - 2 tbsp teriyaki sauce
    - 1 tbsp reduced sodium soy sauce
    - 1/2 tsp garlic powder
    - 1/4 tsp crushed red pepper flakes
    - 1 cup shredded carrots
    - 1/2 cup green onions (scallions)
    - 8 cups spinach

Tips

If you have reduced sodium teriyaki sauce you can reduce the sodium content in this recipe.


Directions

1. In a large nonstick skillet coated with cooking spray, cook turkey in 1 tablespoon oil for 3 minutes. Add the mushrooms, water chestnuts and ginger; cook 4-6 minutes longer or until turkey is no longer pink. Set aside.
2. In a small bowl, whisk the vinegar, teriyaki sauce, soy sauce, garlic powder and red pepper flakes. Stir in the carrots, onions and turkey mixture.
3. Spoon mixture onto a bed of spinach.

Serving Size: makes 4 servings of meat mixture over 2 cups spinach
