Ingredients

    Bag of frozen seafood selection from Tesco
    Either 3 large mixed peppers or 1/2 bag of frozen mixed peppers
    1 large onion
    All purpose seasoning
    Jamaican curry powder
    Olive oil
    tap water

Tips

the preparation time includes the marinating time for the fish prior to cooking. If you can leave the marinade over night, it tastes even better


Directions

Season the mixed fish with the all purpose seasoning & the jamaican curry powder, chop all the peppers & onion into strips & mix in with the fish. Leave to marinate (overnight if possible). Then Gently heat the olive oil in a large wok, add the marinated fish, peppers & onions to the oil & gently begin frying. The natural juices from the fish will allow you to simmer the fish curry constantly, stirring occassionally. Add the water periodically and allow to cook down in its own juices.

When it tastes less salty and the juice looks well done, remove from the heat.
