Ingredients

    1T olive oil
    1T butter
    1 oz (1/4c) flour
    You can use the cup measure, but using weight is more accurate.

    2T (9g) Sundried tomatoes

    3c lowfat (1%) milk
    2 oz part-skim mozzarella


Tips

If you use sundried tomatoes in oil, you don't need to add extra oil in the pan.


Directions

Create roux: Heat a 2qt pot on medium, add fats and sundried tomatoes. Sautee lightly. Add flour and mix until you get a "wet sand" consistency. Temper in milk (add slowly; maybe a 1/2c at first, stir until it's absorbed, add a slightly larger amount, etc.) When the sauce is slightly thinner than you wanted it to be, transfer it to a blender or use a stick blender until the tomatoes are thoroughly blended. A few bits are fine. Return to the stove/pot and add cheese on low heat, stirring until smooth.
