Ingredients

    1 lb. of boneless, skinless chicken breasts, cubed (larger cubes)
    1 cup of sliced onlons
    1 cup of sliced red peppers
    1/4 cup of crushed garlic
    1 cup of sliced fresh mushrooms
    1 cup of fresh string beans, halved
    1 cup of sliced black olives
    2 tbsp. extra virgin olive oil
    3 tbsp. curry powder (spicy not sweet)
    2 tbsp. of dried cilantro
    1/2 tsp. of cayenne pepper (to taste)
    1/2 tsp. of sea salt (to taste)
    ground black pepper to taste


Directions

In a wok or a large frying pan, sautee onions, garlic, and string beans together for two to three minutes. Add peppers and cook another minute or so. Add mushrooms and cook until slightly tender. Put all veggies aside in separate bowl.

Add chicken to pan, and season with salt, pepper, and brown. While browning, add 1 tbsp. of curry powder.

When chicken is cooked through, add veggies back to pot, and add olives. Add remaining curry, cilantro and cook together for another few minutes, until all ingredients are tender.

Serve over brown rice.
