Introduction
Great pancakes with a little sweetness!! Great pancakes with a little sweetness!!Number of Servings: 6
Ingredients

1 cup White flour
1/4 cup and 1/3 cup of soy flour
1 tbsp baking powder
1/8 tsp. salt
2 tbsp. Bob's Red Mill flaxseed meal or ground flaxseed
1 large banana
1/2 tsp vanilla
1/2 cup of milk
1/3 cup of sour cream
1 tbsp. olive oil
Tips
Use pan spray to continue cooking when olive oil runs low in pan. Turn heat down if pancakes cook too fast!!
Directions
Using a medium non-stick pan, turn heat on medium. Add dry ingredients to a bowl. Mix well. In another bowl, mash banana and add eggs. Mix well. Set aside. Add milk, vanilla, sour cream, and egg mixture to dry ingredients. Mix well.
Add olive oil to pan. Pour small amount of mixture into pan (should be able to fit 3 small pancakes into one pan). Flip when pancakes begin to bubble.
Top with syrup or other toppings when ready to eat.
Serving Size: Makes 6-4'' pancakes
