Ingredients

1 medium onion - chopped
2 carrots - diced
2 stalks celery - sliced
1 clove garlic - chopped
4 cups vegetable broth (or water & broth)
2 bunches broccoli (more if desired)
1/2 cup powdered milk
2 tablespoons cornstarch
1 teaspoon salt (less if desired)
1/4 teaspoon pepper (less if desired)
Tips
This makes a thick soup. If you want it thinner, you can add more water or use fresh milk in place of powdered milk.
Directions
Combine chopped onions, sliced carrots, sliced celery, and broth - bring all to a boil. Add broccoli and cook for 5 to 10 minutes until tender. Transfer soup to blender or food processor and puree, adding powdered milk and cornstarch. Return to original pot and add salt and pepper. Heat until rewarmed.
