This stew was served in my cousin's grandfather's restaurant many years ago. Easy to make, hearty, and delicious, this recipe is more than worth the very little bit of effort it requires, and it tastes even better as a leftover.

Number of Servings: 12

Ingredients

    2 lbs. lean beef stew meat, cubed
    4 medium potatoes, cleaned and cubed
    2 medium onions, chopped
    1 15.5 oz. can crushed tomatoes
    12 - 18 baby carrots, sliced
    1 cup celery, chopped
    1 cup frozen peas
    4 tbsp. pearl tapioca
    1.5 tsp. salt
    1 - 1.5 tsp. black pepper
    1 slice bread, cubed
    1 - 1.5 cups water

Directions

Prepare ingredients, and combine them in a crockpot. Do NOT brown meat. Cook on high for 4 hours or on low for 8 hours. Check for doneness after 3 (or 6) hours. Do stir occasionally.
