Ingredients

10-12 boneless, skinless chicken thighs
1 can tomato paste
1 large onion, chopped
4 cloves garlic, chopped
1 1/2 - 2 lemons, about 1/3 cup juice, more if you like sour tastes (Note: Calamanci is best and can be purchased in the frozen isle of any Asian grocery. It's similar to lemon, but with a slight difference in the tartness.)
3 tbs. soy sauce
2 -3 bay leaves
black pepper
Tips
There's alot of sodium in soy sauce. Don't salt the adobo, salt to taste after it's cooked.
Directions
Place your chicken thighs in the crock pot, sprinkle lightly with pepper. In a bowl mix tomato paste, soy sauce and lemon juice until smooth, pour over top of chicken. Add onion, garlic & bay leaves. Cook on low about 5 hours or until the chicken is tender.
Serve with steamed rice.
