Introduction

Ingredients

    19 oz pork tenderloin, cut into bite sized pieces
    2 tbsp Pompeian OlivExtra Olive/Canola oil blend
    114 g Okra, trimmed
    347 g Mushrooms, cut in half
    245 g onion, thinly sliced
    14 oz 99% fat free chicken broth
    4 tbsp garam masala powder
    3 medium zucchini
    1 bunch fresh spinach, washed, stems removed
    1 can Black Beans

Directions

Quickly sear pork in a dutch oven or large pot using olive oil, reduce heat and simmer while slicing onion. Add onions and garam masala powder. While onions are cooking down, clean okra. Add broth and bring heat up to medium.
Add okra and then add mushrooms and zucchini as they are chopped. Rinse spinach thoroughly and add a bit at a time as you shake the leaves dry. Let pot simmer until vegetables are reduced by half.
Add can of Black Beans and continue simmering one hour.
Serve with brown rice.

Serving Size: makes 6 1-cup servings
