My take on stuffed chicken breast. Feel free to sub your favorite kind of cheese. My take on stuffed chicken breast. Feel free to sub your favorite kind of cheese.
Number of Servings: 4


    2 chicken breasts
    1c chopped fresh (or frozen) spinach
    3 slices of reduced fat Provolone cheese, chopped
    1/2c chopped roasted red peppers
    1/4c shredded Parm cheese
    Pam Cooking Spray
    Salt/Pepper/Garlic Powder to taste


Chop spinach, Provolone cheese, and roasted peppers. Mix together and set aside.

Rinse chicken breasts and dry. Cut slit in largest part of breast, be careful not to cut through.

Stuff opening with Spinach/Pepper mix.

Season outside with salt/pepper/garlic.

Bake on 375 for approx 30 min (more or less depending on oven) until juices run clear. During last 5-10 minutes of cooking time, sprinkle Parmesan cheese on top of chicken.

Serving Size: Makes 4 servings (half a breast)
