Ingredients

1 Tablespoon 1 Tsp of Whole grain flour
3 (1/8 tsp) of garlic powder
3 (1/8 tsp) of Salt
3 pinches of Black pepper
1 1/2 pound pork loin cut into 3/4" pieces
1 TBSP EV. Olive oil
1 cup OJ, preferrably fresh squeezed
3/4 cup White Vinegar
3 TBSP Hickory Smoke Flavoring
3 TBSP BBQ sauce (7 carbs or less)
1/2 cup Whole Grain or Whole Wheat Hamburger buns
(optional) 1 1/2 cups onion strips
Directions
Place spices in a bag with flour and mix throughly. Add the pork. Seal bag and shake to evenly coat pork. Refridgerate for 15 mins or more.
Preheat non stick skillet. over med high heat. When heated add oil. Cook pork until browned on all sides. Reduce heat to medium and add the Oj, vinegar, and smoke flavoring. When mixture comes to a boil, reduce heat to low.
Cover the pan and cook for 1 hr, stirring occasionally. When the pork is tender, shred with spoon and mix in the BBQ sauce.
If onion is desired, 5 minutes before serving, coat nonstick skillet with olive oil spray and set to med. heat. Add onion and cook until tender..aprox. 5 minutes.
Makes about 7 servings.
