Ingredients

    2 boneless, skinless chicken breasts
    Marinade:
    1 piece ginger root
    1/2 small onion, diced
    2 tbsp olive oil
    Juice of 1 lime
    1 tbsp. chili powder
    1 tbsp. cumin
    red pepper to your spice tastes
    Sauce:
    1 whole onion, diced
    2 tbsp. garlic
    2 tbsp. cider vinegar
    2 tbsp. olive oil
    1/2 cup skim milk
    1/2 cup sour cream
    1 cup chicken broth
    2 tbsp. chili powder
    2 tbsp. cumin
    red pepper to your tastes

Tips

You can add any vegetables you like, broccoli, bell peppers, zucchini... Also you can add other peppers if you like it spicier. Authentic Thai would add fish sauce or shrimp sauce as well.


Directions

Mix all ingredients for the marinade in a blender and marinate the boneless, skinless chicken breast in the fridge with turning at least one hour to overnight. In a large frying pan, add olive oil, garlic and onion and cook until onion is translucent. Add vinegar, chicken broth, milk and sour cream. Simmer 5 minutes. Add spices and green beans and cubed chicken. Simmer 25 minutes or until chicken is cooked through. Serve over rice or noodles.

Serving Size: Makes about 5 1-cup servings, over rice or noodles
