Introduction

Ingredients

    3 cups uncooked black beans
    4 carrots
    3 onions
    3 cups raw mushrooms
    bay leaves
    2 tsp cumin
    2 tsp ginger
    1 Tbsp oregano
    2 tsp salt
    1/4 tsp hot cayenne pepper
    8-12 cups water

Tips

This is my alternative to presoaking beans: put them in a saucepan with plenty of water; bring them to a boil and simmer 5-10 minutes. Turn the heat off and let the beans stand about an hour. Strain the liquid off & add them to your recipe.


Directions

Presoak the dry beans overnight or use alternate method under "Tips." Put in crockpot with plenty of water. Coarsely slice vegetables & add them. Add spices to taste.
If possible, hold off adding barley until about 1 1/2 hrs before dinnertime.
Serve with grated Parmesan or cheddar cheese.
