Introduction

Ingredients

    Beans, black, 2 cup
    Red Ripe Tomatoes, 1 cup, chopped or sliced
    Jalapeno Peppers, 1 cup, sliced
    Romaine Lettuce (salad), 8 inner leaf
    Onions, raw, 1 cup, chopped
    Avocados, California (Haas), 1 cup, pureed
    Yogurt, plain, low fat, 1 cup (8 fl oz) (optional if vegan)



Directions

Cook and season black beans to taste. Do not add water. Mash with a potato masher, fork, or food processor.

Take romaine lettuce leaves spread on mashed avacado and mashed black beans. Then top with onions (optional), tomato, peppers, and low-fat plain yogurt.

Makes 8 yummy and very filling tacos.
