Ingredients

2 pounds boneless, skinless chicken breasts
2 tblsp Taco Seasoning
1 cup-petite diced canned tomatoes, with juice
1 medium onion, finely diced (1 cup)
1/2 cup finely diced celery
1/2 c shredded carrots
1 cup salsa
3 tblsp reduced fat sour cream
1 can (11oz) of corn
Tips
Alternate cook time: One hour on High and 4 hours on Low.
Directions
Place chicken in slow cooker, sprinkle with taco seasoning, then layer vegetables and salsa on top. Pour 1/2 cup water over the mix. Set on low and cook for 6-8 hours.
Serving Suggestions:
-Wrapped in whole wheat tortilla
-Spooned into whole grain tortilla shells
-Layered over tortilla chips
