Introduction

This is a great Southwest vegetarian based stew which makes two large or three smaller servings. You may add chicken, a link of your favorite sausage, shrimp or omit the meat to have a vegetarian dish. I have also added fresh red and green bell peppers with the onion mixture if I have them on hand to add additional vegetables. Ingredients

    3/4 C. Onion
    1 breast of chicken
    2 t. Garlic, minced
    1 t. ground Cumin
    1/2 t. crushed Red Pepper
    1/2 t. Tabasco
    1 can Black Beans, drained and rinsed
    1 can corn, drained
    1 can Rotel, tomatoes with green chilies
    2 T. chopped Cilantro

Directions

Saute 3/4 cup onion in 1 T. olive oil. Add chicken and cook thoroughly, stirring occasionally. Add 2 t. minced garlic, 1 t. ground Cumin, 1/2 t. crushed red pepper, 1/2 t. Tabasco sauce and cook for approximately 5 minutes. Add drained and rinsed black beans, drained corn, and can of Rotel tomatoes. Heat thoroughly, approximately 10-15 minutes. Add cilantro and cook another 5 minutes. Serve hot! Makes 2 large or 3 smaller portions.
