Ingredients

    1/3 cup Liquid Egg Whites
    3 T. Non-Fat Plain Soy milk
    3 T. Fresh Strawberry Puree (unsweetened)
    3 T. Rolled Oats
    1/2 t. Baking Powder
    1 T. Cocoa Powder
    1 Packet Sweet Leaf Stevia
    1 t. Vanilla

    I topped mine with some yummy protein frosting!

Tips

The strawberry could be substituted with about anything.
Suggestions: 1/4 cup pumpkin puree, 3 T of unsweetened applesauce, 1/2 banana, mashed


Directions

Combine all ingredients in microwave safe cup or bowl (I used my 2 cup Pyrex measuring cup)
Microwave for 5 1/2 minutes. (Microwaves will vary, so start with about 4 minutes and check it!)

Serving Size: 1 Breakfast Brownie Muffin
