Introduction

Hearty corn chowder for leftover turkey and stock. Hearty corn chowder for leftover turkey and stock.

Ingredients

    red onion, chopped
    red pepper, chopped
    garlic, minced
    trukey breast, chopped
    2% milk
    turkey stock
    cornstarch
    canned corn, niblets
    canned corn, creamed

Tips

I add 1/2 tsp of smoked paprika. Nice with cornbread.


Directions

Saute onion, pepper and garlic for 5 minutes. Add stock and turkey, simmer for 15 minutes. Add corn and 1 cup milk simmer 10 minutes. Add cornstarch to 1/2 cup milk, add to soup and simmer 5 minutes until thickened.
Salt and pepper to taste.

Serving Size: makes 5 1-1/3 cup servings
