Ingredients

1 1/4 c milk (I use soy milk b/c hubby is allergic to dairy(
1/4 c water
2 Tbsp Honey
3 c whole wheat flour
1/3 c wheat germ
2 1/4 tsp (one packet) active dry yeast (or instant - doesn't matter)
1/2 c white flour (I actually used about 4 oz of old dough - dough left from a batch of french bread I made. I saved some of it in the freezer before baking the rest. Makes the texture SO much better!)
Tips
The next time you make a neutral bread (like french, or italian, or pizza dough), save a little bit between the first rise and the shaping rise. toss it in a freezer bag. The next time you want to make bread, thaw it out, and knead it in with your dough. It makes an amazing difference to taste and texture. You can either use less flour and water, or make a slightly bigger loaf.
Directions
add all ingredients in order listed to bread machine, with the exception of old dough. If using flour instead, add with other flours.
Set to whole wheat loaf setting. As bread is mixing, add old dough in small pieces. Let the bread machine do it's thing!
