Ingredients

1 lbs lean ground beef
1 large onion, chopped
2 egg whites
3 tbsp barbecue sauce
1 tsp crushed red pepper flakes
1/2 cup reduced fat blue cheese crumbles
dash salt + pepper
1 tbsp olive oil
Directions
1. Preheat the oven to 350 degrees.
2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the onion, and cook for 5 minutes, until caramelized. Stir in 1 tablespoon of barbecue sauce and turn off the heat.
3. While the onion cooks, combine the beef, egg, and red pepper flakes in a large bowl. Use your hands to combine. Add half of the onions to the bowl, using a spatula to mix them in. Transfer the beef to a greased loaf pan, pressing down gently to spread it evenly in the mold.
4. Add the rest of the barbecue sauce to the onions in the pan. Top the meatloaf with the onions. Bake for 1 hour 15 minutes.
5. Remove the meatloaf from the oven and set the oven to broil. Baste with extra barbecue sauce if you'd like, then top with the blue cheese. Place the meatloaf under the broiler for another 3 to 5 minutes, watching closely the whole time so that the top of the meatloaf doesn’t burn. This will make the blue cheese brown and bubbly.
6. Remove the from oven, let sit at least 15 minutes, then serve.
