Introduction

Number of Servings: 6

Ingredients

    8 oz zucchini (1 medium size)
    7 oz summer squash (1 medium size)
    2/3 cup Parmesan cheese
    1 egg, beaten
    salt and pepper to taste
    1/2 cup oil for frying

Tips

Only cook 3 at a time to allow for easy flipping. Use a non-slitted spatula. Don't turn patties until the edges are a deep golden brown.


Directions

Shred squash and then toss in a bowl with a beaten egg and 2/3 cup of Parmesan cheese. Heat oil in pan on medium high heat. Form squash patties, 3 at a time, and gently place in oil for 3 minutes per side.

Serving Size: Makes 6 patties
