Ingredients

1 12 oz package chopped onions and peppers, thawed 9 or 1-1 1/2 cup fresh)
1 tsp salt
1 tsp pepper
1/2 tsp thyme,dried
1 tsp minced garlic
1/4 cup low-sodium soy sauce
3/4 cup low-sodium chicken broth
2 tsp tomato paste
3 lbs exta-lean ground turkey ( or chicken)
1 cup quick cooking oats
4 egg whites
1 cup reduced sodium ketchup
Tips
The original recipe said that it can make 24 servings. I found the servings very small. So I adjusted it to suit me, at 16 servings per dish.
Directions
1/ Preheat oven to 350 degrees. Prep 9x13 dish with non-stick spray.
2/ in a large saute pan, cook the onions, peppers, with salt, pepper, and thyme until onions are translucent ( about 5 min).
3/ Add garlic, soy-sauce, chicken broth, and tomato paste, mixing until heated through. Set aside to cool.
4/ In a large bowl, combine ground turkey, egg whites, oats, and sauted mixture. Mix by hand until all incorporated and press flat into the pan.
5/ Spread ketchup in an even layer on top of the prepared turky mixture and place into oven to bake for 1 hour, and 20minutes.
