Ingredients

    2 Cucumbers, peeled & diced
    4 Roma Tomatoes - diced
    1 Red Onion (I use 1/2)
    1/4c Lemon Juice
    2tbsp Olive Oil
    3 tbsp Fresh Mint (I use about 5 leaves)
    1c Feta Cheese - crumbled
    Salt & Pepper to taste

Tips

I like to chill this salad before eating.


Directions

Prep & mix all vegetables together. Add lemon juice and olive oil. Mix in feta cheese.
