Ingredients

    1 pound of salmon fillets
3 T Brummel and Brown spread
2.8 oz (1/2 of a small bottle) of Gallo Chardonnnay white wine
Juice of 2 or 3 lemons to taste
    Paprika
    Spinach (prewashed from bag)

Tips

Serve fish on plate putting spinach on the top and pouring some of the reduced wine/lemon juice over it. The reduction is also good over the accompanying starch (like rice pilaf or risotto).

Directions

In a large teflon skillet with a cover, heat the Brummel and Brown on Medium and melt it, swishing it around to coat the bottom of the pan. Add the salmon, putting the pink side down in the "butter", then turning over and placing skin side down. Sprinkle with paprika. Pour white wine over the fish and lemon juice to taste. Cover and reduce heat to low. Simmer 15 minutes until salmon is flaky and almost done (depending on the thickness of the fillets). With about 5 minutes left, open cover and place spinach all around and on top of the fish. Re-cover and cook an additional five to ten minutes until spinach wilts.
