Number of Servings: 6

Ingredients

    1 C. uncooked quinoa, rinsed well
    1 C. vegetable broth, plus 1 C. water
    1/2 large cucumber, seeded and small diced
    1/2 large red bell pepper, tiny diced
    1 C. packed spinach, rough chopped
    juice of 1 small lemon
    1 Tbsp olive oil
    two dashes oregano
    1/4 C. Fat-Free Crumbled Feta Cheese
    salt and pepper to taste

Tips

This is a great side dish served cold or at room temperature.


Directions

Cook quinoa in water/vegetable broth, about 10-15 minutes until translucent. Cool.
In the meantime, wash and prep the vegetables.
Mix all ingredients, saving the cheese til last and gently fold in.


Serving Size: Makes about 6 1-cup servings
