Ingredients

    2 cups 16-bean dried bean mix
    1 medium red/white onion
    6 jalapenos, fresh
    4 cloves fresh garlic
    3 carrots, chopped
    2 bay leaves
    1 bunch fresh cilantro
    2 smoked turkey legs
    1 can diced tomatoes, no-salt
    sour cream, light/fat free
    6-8 cups water

Tips

you can use any smoked meat, but I discovered I prefer the texture and lower caloric benefits of using turkey, rather than ham. there's also enough salt from the smoking process that i do not salt the soup later, I only add pepper.


Directions

keeping the smoked turkey legs whole, place all other ingredients in the low-cooker, minus the cilantro, diced tomatoes and sour cream and let cook on low for 8 hours, 5 if you cook on high. at the end of the cooking time, remove the turkey legs and shred the meat and place back in the slow-cooker. chop up desired amount of cilantro, add diced tomatoes and return to slow cooker. Let cook another few minutes to incorporate flavors. Season with pepper to taste. Serve into bowls, add some fresh cilantro and sour cream. Enjoy!!
