Ingredients

    Broccoli Slaw, one standard bag
    1 med. red bell pepper, chopped
    Romaine Lettuce, 2 cup, shredded
    Cucumber (with peel), 1 cup slices
    Scallions, raw, .5 cup, chopped (optional)
    Cilantro, raw, 4 tbsp - chopped
    Almonds, .5 cup, sliced - I like dry roasted, no salt
    Chicken, Trader Joe's Breast Tenderloins (12, broiled, grilled, baked or poached - no oil added)
    Seasoned Rice Vinegar, 4 tbsp
    Lime Juice, 2 lime yields
    Sesame Oil, 3 tsp.

Tips

I like to grill the chicken. You might also like adding some mandarin oranges.


Directions

Combine all just before serving, toss. Serve alone as a light meal or with soup, fruit, or a rice/noodle dish.
