Introduction

Trader Joes soyrizo is my favorite for texture and taste. The spice in it means that you only have to add a little more of your own to taste. Nobody knows, yet, that there is no meat in my chili! Ingredients

    2 tablespoons Extra Virgin Olive Oil
    1 cup chopped carrot
    1 cup chopped celery
    1 cup chopped red bell pepper
    1 cup chopped onion
    1 cup chopped crimini or portebello mushrooms
    1 cup chopped zucchini
    1 cup chopped yellow squash
    1 16oz pkg Trader Joe's Soyrizo
    1 small can 4oz-5oz tomatoe paste
    2 large 32oz cans stewed tomatoes
    1 16oz can pinto beans
    1 16oz can black beans
    1 16oz can kidney beans
    1 tablespoon Chili Powder,to start with
    1 teaspoon Cumin Powder , to start with
    Salt and Pepper to taste

Tips

NOTE: I serve with baked corn tortilla chips. I cut corn tortillas in triangles, spray with canola oil spray and sprinkle with sea salt. Baked at 425 for 13 mins.


Directions

Chop up all veggies to approx same size. Saute in large dutch oven size pot in the olive oil until all are tender, add mushrooms last. Cook Soyrizo for approx 15mins on low-med heat in separate saute pan. Add cooked Soyrizo to veggies. Add cans of stewed tomatoes, tomatoe paste, and beans. Add spices and salt and pepper to taste. Simmer on low for approx 1 hour.
