Ingredients

1 onion, chopped
6-7 carrots chopped coursly
3/4 coconut milk
2tsp grated ginger
Juice of one orange
500mil of soy/almond/skim milk (choose one)
1/2 tsp chilli powder
1 tsp cinnamon powder
Tofu/Chicken (optional)
Tips
You can eat this soup at any time of the day. To keep in low in fat, choose low in fat soy milk or almond milk. You won't taste the difference!
Directions
Chop onion into small pieces
Cook onion until tender
Add grated ginger
Stir in chilli and cinnamon powder
Add chopped carrots
Stor in coconut milk and other milk
Add the juice of orange
Mix well, cover and bring to boil. Reduce heat and simmer
Once carrots are tender, allow the soup to cool and use a food processor to puree the soup.
If adding tofu or chicken, cook these first and then add in once soup has been processed. That's it! Delicous!
