Number of Servings: 8

Ingredients

    8 Cups Water
    Chicken Boullion, follow pkg recipe
    3 Med. Plantains, sliced 1" thick
    2 Med. Potatoes, 1" cubes
    2 Med. Celery stock w/greens, 1" pieces
    1/2 white onion, sliced or chopped
    1 Cup Kernel Corn
    1 tsp Extra Virgin Olive Oil
    S&P to taste

Tips

I usually serve with a hard bread.


Directions

In a large stock pot, bring water to a boil, add boullion and cook for 3 mins, lower heat to medium roll.

Add vegetables except the plantains, see below... This will slowly boil for about 10 mins.

While that is boiling, add plantains and olive oil to saute pan and lightly brown both sides. Add these to the pot and lower to a slow roll. Cook for about 10 mins.




Serving Size: Makes 8 2-cup servings
