A twist on a Mexican favorite A twist on a Mexican favorite

    1 lb. chicken breast, cut in strips
    Cooking spray
    1 pkg taco seasoning
    10 oz bag frozen peppers and onions
    8 flour tortillas, 8 inch

    1 can Campbell's Southwest Pepper Jack Soup
    1/2 C low fat sour cream
    4 oz shredded cheddar cheese


Cut chicken into strips. Place in large skillet with cooking spray. Turn chicken to brown evenly. Add frozen peppers and onions and cook until liquid is evaporated. Add taco seasoning and simmer over medium low heat, 5-8 minutes.

Heat soup per directions.

Fill each tortilla with equal parts of mixture and fold. Top with equal amounts of cheese soup, cheddar cheese and sour cream (I have heated all of these together and poured over the fajita).

Points: 6 per serving
Servings: 8 fajitas

Add brown rice and salsa for 4 extra points.
