Introduction

Ingredients

    2 cups whole wheat pastry flour
    1/2 cup golden flax meal
    2 teaspoons baking powder
    1/2 cup Benefiber powder
    1 cup soy fat free soy milk
    1/4 cup water
    1/4 cup honey
    2 tbsp vanilla extract
    1 teaspoon almond extract
    1/2 cup fat free mayo
    2 cups blueberries - fresh or frozen

Tips

You can switch up extract flavoring - try lemon for a brighter flavor. Add 1 tablespoon Truvia or other natural sweetener if you like a sweet muffin. Raspberries work well also.


Directions

Add all dry ingredients to your mixer bowl. In a large 4 cup measuring cup mix the wet ingredients until blended. Add wet ingredients slowly to the dry. Stir until moistened. Fold in blueberries. Using a large ice cream scoop or 1/4 measuring cup, fill muffin cups. Bake approximately 16 - 20 minutes or until tops are set.

Serving Size: makes 14 muffins
