Introduction
This soup was made with all the vegetables I could get my hands on, plus some ham and beans for flavor and fiber. This soup was made with all the vegetables I could get my hands on, plus some ham and beans for flavor and fiber.Number of Servings: 6
Ingredients

1 can diced tomatoes
1 cup diced ham
1 cup white navy beans
1/4-1/2 bag frozen vegetables
1/2 cup chopped asparagus
2 cups vegetable stock
1/4 raw onion, diced
1 cup small pasta noodles
Directions
The vegetable stock I made weeks before by throwing saved veggie scraps in a Crock Pot on high all day, and saving the stock in the freezer. I added 2 cups stock, 1 can of diced tomatoes plus the juice, the beans, ham and all the veggies into a sauce pan. Bring it to a boil and simmer about an hour to mix the flavors. Add the cup of pasta noodles, and boil for 10 minutes to fully cook. Amazing blend of flavors, very low calorie and almost no fat! Omitting the ham makes it vegan as well. You could probably make this in the Crock Pot too, just leave it on low or warm all day and cook the noodles just before eating, or eat without the noodles.
