Ingredients

    1 and 1/3 cups fresh or frozen peas
    1/2-inch wide onion wedge, or 2 scallions, dark green parts removed
    1 baby carrot
    2 cups chicken broth, microwaved until steaming
    1/2 tsp. fresh minced garlic
    1/2 tsp. each dried oregano and basil
    1/3 cup plain Greek yogurt or light sour cream

Tips

If you use frozen peas, go with the "petite" variety.


Directions

Vita-mix instructions:
Layer all ingredients but the yogurt in your vitamix in the order written. Set to variable 1, turn on, then raise the speed to 10, then High. Blend for 5 minutes or until steaming. Turn off, add the yogurt, then blend on Variable 4 for 1 minute. Serve.

Stovetop:
Bring all ingredients, except the yogurt. to a simmer over medium-high heat. Blend with a stick blender until smooth, then stir in the yogurt. Serve.

    Very Good
    I used slightly less onion as I find that flavour a bit harsh in vitamix soups. Otherwise, a really delicious, quick and easy recipe. thanks! - 12/29/13
