Ingredients

    Brown Rice
    2 Bell Peppers
    Half a small packet of Mushrooms
    1 small yellow onion
    4 portions of Brown Rice
    4 large eggs

Tips

Add a little soy or chilli sauce for extra flavour.
Try adding some lean chicken or quorn chicken style strips or pieces to bulk it up a little.


Directions

Put Rice on to cook.
Dice onion.
Dice 1 pepper.
Cut the other pepper into strips.
Cut Mushrooms into strips.
Fry all the veggies in a pan with a small amount of oil.
When the rice is cooked, add it to pan.
Add 4 large eggs.
Stir rice and vegetables until the egg has cooked.
Serve.

Serving Size: Makes 4 cereal bowl sized servings
