Ingredients

1 Can Mexican Stewed Tomatoes
1 Can Black Beans
1 Can RoTel
1 Bag Shredded Mild CHeddar (Reduced Fat)
1 2/3 C MorningStar Meal Starter Crumbles
Tips
Make sure you adjust your calories if you use more or less ingredients. Also make sure you aren't using a huge casserole dish or its going to be flat though it would make more and lower the calories.
Directions
Prehead oven to 350
Spray a smll baking dish with nonstick spray
Drain liquid out of black beans and tomatoes and put into a medium sized bowl
Add the can of rotel and mix well.
Layer as many tortillas as it takes to cover bottom of pan
Put tomato/bean/chilli mixture on that
Layer meatless crumbles next
layer cheese
layer of tortillas.
Contyinue until all mixture is gone and make sure the top layer is cheese.
Cover with aluminum foil and bake at 350 for 40 minutes. Remove foil and bake another 10 minutes.
