Ingredients

1 cup Bob's Red Mill Cornmeal
1 cup Organic rBST free Reduced Fat Buttermilk
1 cup White Whole Wheat flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1/4 cup unsalted Butter, melted
2/3 cup Applesauce, unsweetened
2 TBS Honey
1/3 cup Granulated Sugar
2 Large Eggs
Tips
Can add diced jalapenos to the wet ingredients for more of a kick if desired or make a honey butter to serve with it!
Directions
In a large bowl, mix together buttermilk and cornmeal. Let sit at room temp for 30 min.
In a smaller bowl mix together flour, baking powder, baking soda, and salt.
One the 30 min is up, pre-heat the oven to 375 degrees and mix the melted butter, apple sauce, honey, sugar, and then eggs into the wet ingredients.
Mix in the dry ingredients just until it is not clumpy. pour into a greased 8x8 pan and bake for 30-35 min or until golden brown and a toothpick inserted in removed cleanly.
Serving Size: Makes one 8x8 pan of 16 square servings
