Introduction

Something I threw together with little to nothing in my cupboards. Something I threw together with little to nothing in my cupboards.

Ingredients

    1tsp olive oil
    1/2 cup chopped onion
    1/2 stalk celery (5-6") chopped
    1 large carrot (about 1/3 cup), chopped
    2 bullion cubes
    2 cups water
    6 aldi's turkey meatballs cut into quarters
    1 cup per cooked brown rice

Directions

Add oil and veggies to pot and sautée until onions are translucent. Add water, cubes and meatballs. Simmer for 20 min, or until carrots are soft. Add precooked rice and serve.

Serving Size: Makes 2 side portions, or one meal portion
